So, I don’t even like pickles. The texture freaks me out and I’m not crazy about vinegar tastes. But one day at meal prep, T asked me if I could make her some pickles and I thought, why not? How hard could it be?
Turns out: Not that hard at all! I found this quickles recipe from The Sophisticated Caveman and I was on my way.
The first batch of pickles went so well she declared it her favorite dish I have ever made. Which, she’s eaten a lot of my food, so that’s saying something.
Since she loved the pickles so much, she asked if I could make a huge batch for the following week. Which, of course I could! I have no concept of when to quit.
So, I ended up making 10 jars of pickles. These jars were 32 oz each. Don’t worry, I did the math: that’s 320 oz of pickles. I hope T doesn’t get tired of pickles anytime soon!
Also, my mandolin took first blood when I was slicing the cucumbers. I accidentally nicked a chunk out of my thumb. Everyone make sure your doors are locked tonight in case it develops a taste!
