We had some friends over for brunch and they left the menu in my hands with the request that there were no pancakes. I said, no problem. So Dan and I brainstormed and we decided to head to the islands for this brunch.
Let’s take a look at the table:





Here is the menu:
- Hawaiian Scrambled Eggs
- Fried Spam
- Hawaiian Fried Rice
- Bacon
- Hale ‘Ohu Banana Bread
- Hawaiian Berry Smoothie



This was actually my first time frying Spam. I remember eating it as a kid a few times and really disliking it. Of course, I can’t imagine it was properly prepared when I had it. It was definitely the star of the meal. I got another can next time I saw it in a grocery store. Definitely amazing.
The fried rice was also a stand out. I had never made fried rice before, but I had gotten expert advice on how to season my new wok and I was ready for adventure. It was so delicious. I definitely want to make that again and I can see lots of ways to switch up ingredients in the future.
I was not super happy with the berry smoothies. I think I needed to blend them more. I also couldn’t get them to layer like in the recipe photo. Which I believe could have been a result of not blending them more. I don’t make a lot of smoothies, so am still on that learning curve.
All in all though, I was very pleased with how everything turned out. Dan turned on Ukulele background music while we ate and it was a great touch!
