Unicorn Brunch

It’s not every day your work wife has a birthday. Definitely not every day she flies from Virginia to come to Texas to meet you in person for the first time and celebrate said birthday. I knew I had to make this birthday weekend the most magical unicorn birthday weekend ever!

And in my house, we take our unicorns seriously.

Let’s Take a Look at the Brunch Table


Brunch Details

We did a waffle bar for brunch. Complete with pink waffles, unicorn sprinkles, chocolate ganache, and, of course, whipped cream!

We added in the usual maple syrup and butter, added in some fresh strawberries, and threw in some protein for those among us who didn’t just want to eat sugar. Even though sugar is so delicious.

Waffle bars are always fun because they’re generally easy to manage. You just get all of the fixins’ ready before you start the waffles and once the waffle maker is ready, you crank out the waffles one batch after another. Pretty simple, all things considered, and definitely delicious.

I should mention, I did create a drink that is not pictured. I Frankensteined two recipes together and used my unique ability to look at a recipe from a kid’s blog and ask myself, “Can I add vodka to that?” Here is the drink:

Ingredients:

  • 1 small scoop of rainbow sherbet
  • 4 oz Sprite or Sprite Zero
  • 1 oz cake-flavored vodka (I used Pinnacle)

Instructions:

  1. Scoop the sherbet into the the cup.
  2. Add the vodka
  3. Cover in Sprite
  4. Gently stir, then enjoy

It really had no business being as delicious as it was.
